Radość z bycia razem
Kreatotourta, czyli tort mięsny, to tradycyjna potrawa z okolic Chanii, podawana zawsze podczas przyjęć weselnych. Kiedy moja córka wychodziła za mąż, wzięłam na siebie obowiązek przygotowania tego dania. Na kreteńskie wesela zaprasza się ok. 600 osób albo więcej, więc przygotowanie tylu tortów było ogromnym przedsięwzięciem. Zaprosiłam więc do swojego domu wiele kobiet z wioski, aby mi pomogły. Zmęczenie było duże, ale radość i przyjemność ze wspólnego gotowania jeszcze większe!
Składniki:
Ciasto:
- 1 kg mąki pszennej lub żytniej
- 25 dkg margaryny
- 1 łyżka masła
- 20 dkg gęstego jogurtu
- niewielka ilość wywaru z mięsa (opcjonalnie może się przydać przy wyrabianiu ciasta, aby było miękkie)
Nadzienie:
- 80-100 dkg wołowiny
- biały ser (słodki i słony – pół na pół)
- mięta pieprzowa
- sól , pieprz
- gałka muszkatołowa
Do posypania:
- sezam
- jajko
Mieszamy składniki na ciasto i dobrze je ugniatamy. Mięso mielimy, podsmażamy i przekładamy do naczynia. Dodajemy sery, przyprawy. Wszystkie składniki nadzienia dokładnie mieszamy. Wałkujemy wcześniej przygotowane ciasto i jedną jego połowę wykładamy na dno niewielkiej blaszki. W ten sposób tworzymy dolną warstwę tortu. Nadzienie rozkładamy na cieście. Pozostałą częścią ciasta przykrywamy farsz i zamykamy tort, łącząc szczelnie dwie warstwy ciasta. Ubijamy jedno jajko i smarujemy nim ciasto. Posypujemy niewielką ilością sezamu i wstawiamy do piekarnika nagrzanego do temperatury 180°C. Pieczemy przez około 45 minut, aż tort nabierze intensywnego, złotego koloru.
